Abstract

Curently, the research and manufacturing of coatings for fruits preservation based on natural origins to overcome the disadvantages of artificial polymeric (non-biodegradable) are interesting and highly applicable. Among them, natural polysaccharides such as chitosan have been used widely for food preservation. This paper presented a method of fabricating nanocomposite coating applied to preserve mango based on chitosan combined with rutin nanoparticles. The nanoparticles had an average size of 50 nm, which was added to the chitosan 2% solution with 0.5% content. The results demontrated the fomula gave best preservation effect compared to the others formulas in the study. Mango samples coated with this formula had the longer preservation time (18 days) and accumulated more vitamin C and sugar content than those in the control samples.
